Valentine’s Day Cake

Valentine's Day Cake

preheat oven to 350*

I’ve experimented with this RICH yet surprisingly light cake for many years-
It’s my favorite & regardless of friends & families dietary restrictions
they LOVE it too-

No flour, oil or leavening is added-
Rich coffee flavors runs throughout the cake & frosting-

I’ll admit that sometimes I get distracted because I tend to multitask & occasionally forget to add the egg whites-
so it’s less light & more  brownie-like.
With or without the egg whites, this cake is hands down the most rich, decadent, delicious cake I’ve ever had-
It pairs nicely with freshly churned vanilla ice cream & a hot cuppa–

Cake;
1 packet of Starbucks Italian roast “Via” plus 1/3 c. water
1 1/2 c. sugar
2 c. chocolate chips (1- 11 ounce bag semisweet chocolate chips)
1 1/2 t. pure vanilla extract
1/2 c. butter
12 egg yolks (keep egg whites for later)
1 3/4 c. organic walnuts, ground (food processor, ground like coffee grounds)

In a medium size saucepan, over low heat;
Coffee, water & sugar. Mix then add chocolate chips & stir.
Once mixed add vanilla & remove from heat.  Let cool 5-10 minutes.

With an electric mixer;
Cream butter, add egg yolks & mix. Add ground walnuts, then chocolate mixture.

In a separate (metal) mixing bowl;
Beat egg whites until firm but not dry-  Fold whites into the chocolate batter-

Place 3 layers of parchment paper on counter top, draw around the cake pan with a pencil then cut out with scissors- Cut some straight pieces to use for the pan sides. Line pans.

Evenly distribute the batter into cake pans. I add 1 or 2 scoops of cake batter to each cake pan until all three
are evenly filled.

They will look a bit empty- but don’t worry-

Bake @ 350 for 25 minutes (a little less time in a convection oven).

Frosting;

2 c. chocolate chips (1 eleven-ounce bag of semisweet chocolate chips)
1 packet of Starbucks Italian roast instant “Via” plus 1/3 c. water
1 c. + 2. T. butter
4 egg yolks
2 c. powdered sugar + a little for dusting the finished cake plate edges.

In a medium size saucepan, over low heat;
Slowly melt the coffee , water & chocolate chips.
Once smooth & blended; remove from heat.
Cool for about 7-10 minutes.

In a separate bowl;
Cream the butter, add egg yolks, then sprinkle in the powdered sugar.
Once smooth & well mixed, add in the chocolate mixture.

note; make sure when adding something hot to eggs that you don’t cook the eggs-
add a little at a time & keep stirring because you don’t want a lumpy cake-

enjoy!

Cowboy Cookies

Get in my BELLY!
Get in my BELLY!

This cookie is a bit like an energy bar‐
The batter is thick & sticky. This recipe makes a big batch of cookies‐ I use Glad “Press n’ Seal” & it keeps
them fresh & they freeze well.

Ingredients;

2/3 c. butter, melted
1 1/4 c. brown sugar
3/4 c. sugar
3 eggs, beaten
1 1/2 c. crunchy peanut butter
6 c. oats (old fashioned Quaker Oats)
2 t. baking soda
1 c. chocolate chips (dark semi sweet)
1 c. butterscotch chips

Melt butter.
In a BIG bowl;
Blend melted butter in with sugars, eggs & peanut butter until fully mixed.

Mix in remaining ingredients‐ & as you’re adding the oats gently sprinkle in the baking
soda & mix well-

Using a teaspoon or a tablespoon, form a ball for each cookie, then place on a parchment paper covered cooking sheet.

Bake at 350*
12‐15 minutes

They’ll cook faster in a convection oven; 10‐12 minutes.

All American Cranberry Sorbet

WHAT SCREAMS A-M-E-R-I-C-A like an Oxycoccus? The genus Vaccinium aka the CRANBERRY-

I ♥ experimenting with cranberries!  In preparation for Thanksgiving I made this today;

Cranberry Sorbet with an Ojai “Pixie” Tangerine Reduction

3-4 c. fresh, organic “Pixie” tangerine juice
In a medium size saucepan, over medium heat;
reduce tangerine juice to about one half. Stir often.  Once reduced, set aside to cool.
In a medium size saucepan over medium heat;
cook the cranberries in water w/ cloves, until cranberries begin to ‘pop’, then set aside to cool.
2-3 c. water
1-12ounce bag of fresh cranberries
5-7 whole cloves
Drain, saving the cooking liquid. Set aside to cool.
Place cranberries & cloves in a blender & puree.
For each step I strain the cranberry mixture- I like smooth sorbet.
In another medium size saucepan, heat & stir until sugar dissolves;
2 c. cranberry liquid reserve
1-2 c. tangerine reduction
1 1/2 c. sugar
Strain the cranberry puree through a sieve, as you don’t want to have seeds or fiber in your sorbet-
Add strained cranberry puree mixture to the liquids & stir to mix.
Cool a few minutes then place all ingredients into your prepared ice-cream maker for about 20-30 minutes.
This can be made ahead of time-  Store in an airtight container in the freezer. Remove from freezer about
15 minutes before serving.
Scoop to serve with a mini-mellonball tool.

Serve on top of a fresh basil leaf, or in a delicate dessert cup-

A REFRESHING, flavorful dessert after a Thanksgiving Feast-
I don’t like pumpkin pie…
This cranberry dish is also a great between-course palate cleanser –
enjoy!

Zucchini Bread

This recipe is being Jelly Blogged today for my sweet “Insight” buddy Marc LaFont– he’s up to his ears in zucchini!

Good use of your abundant crop, but also helps keep it around throughout the year if
you freeze it.
If you friends & neighbors get a whiff of this tasty treat, that wont want your ‘extra’ zucchini anymore, but your zucchini bread instead!

This moist, sweet, nutty bread is very easy to make & it freezes well-
It’s good morning, noon & night!
Stash some in your freezer to last throughout the winter- pull it out in the morning & have in place of toast,
or as a midday snack, or an evening dessert-like treat.
It’s delicious plain, with a dab of butter, or a smear of cream cheese.
Just pop a piece in the toaster & enjoy with coffee or tea-

Preheat oven to 350.  Grease & lightly flour bread pans.

Ingredients;

3 eggs
1 c. canola oil
2 c. “Turbinado” raw sugar (or 1 c. brown & 1 c. white)
2 c. fresh grown, organic zucchini squash
3 c. flour (I use 1 1/2 c. whole wheat pastry flour & 1 1/2 c. “Swan’s Down” cake flour)
½ t. salt
½ t. baking powder
½ t. baking soda
3 T. cinnamon
1½ c. walnuts (chopped)
¾ c. raisins
1 t. vanilla extract

In a large bowl;

Beat eggs till foamy, add oil, sugar & zucchini.  Mix lightly.
Add dry ingredients & mix.

Bake at 350 for about an hour.

This recipe makes a lot-
I always bake using my all time favorite “French” mini-loaf pan.  After the loaves cool completely, I wrap each loaf individually with “Press ‘n Seal”, then put them all in freezer bags for my Winter Stash!

enjoy!

1 c. self rising flour
3 T. brown sugar
1 t. baking soda
1/2 t. cinnamon
2 c. buttermilk
3 eggs, separated

1. Prepare your waffle iron & spray lightly with oil-
2. In a large mixing bowl, mix together the flours, sugar, baking soda, & cinnamon.
3. In another bowl stir together the buttermilk, egg yolks, & butter.
4. In yet another bowl beat the egg whites until just shy of stiff.

Lime Marmalade-Strawberry Cupcakes

Lime Marmalade-Strawberry Cupcake

♣ with Strawberry Cream Cheese Frosting ♣

makes 14-16 cupcakes
Preheat oven to 350•

In a bowl mix the dry ingredients then set aside;
1 1/2 c. Swan’s Down Cake Flour
1 t. baking powder
1/2 t. baking soda
pinch of salt

In a different bowl, cream;
3/4 c. sugar
1/4 c. butter (@ room temperature)

To the sugar & butter add;
1 egg yolk (save the egg white)
3/4 c. buttermilk
about 15 drops of Strawberry Oil
3 Organic Strawberries, topped & chopped
2/3 jar (3.5 ounces) “E. Waldo Ward & Son” Lime Marmalade

Beat 3 egg whites until light & fluffy, not dry or stiff

Add the dry ingredients to the wet, then fold in the egg whites gingerly.

Bake for about 20-25 minutes.  Ready when toothpick comes out clean.

Cool on rack for about 10 minutes, then take cupcakes from tins & allow to fully cool on rack before frosting.

My favorite new kitchen tool is a “Batter Pen“- it makes filling cupcake tins fast, clean & easy.
I also recommend using cupcake paper liners that are made of special parchment paper, they don’t allow the cupcakes to stick.  Company name will be blogged soon-

Strawberry Cream Cheese Frosting
You’ll need 14-16 Organic Strawberries; wash, dry & leave the tops on.

With an electric mixer, cream;
4 ounces cream cheese (room temperature)
1/4 c. butter (room temperature)

Then add & mix well;
pinch of salt
about 10 drops “Strawberry Oil”

Blend in;
3/4 c. powdered sugar

Pipe;
frosting onto cupcakes & decorate with a fresh strawberry on each-

I suggest you don’t tell what’s in your cupcake. It’s fun to let your guests try & sort it out!

enjoy!

Crème Brûlée

This is a velvety-rich dessert that’s easy to make & always a crowd-pleaser.
It’s a recipe that’s easy to double- (you weight will double too, IF you make it too often!)
It’s a good one to make when I make cupcakes (blogged next), so I don’t waste the leftover egg yolks.

Ingredients:
16 ounces heavy cream
4 egg yolks
1/2 c. sugar
splash + of vanilla extract OR hazelnut concentrate (my personal favorite)

In a small saucepan;
Heat cream until it is bubbling around the edges

In a separate bowl mix;
egg yolks & sugar only

Once it’s mixed, slowly add the cream; IF you add it too fast you’ll cook the yolks!
Mix, then add the extract.

Pour into individual serving dishes that are oven safe.
Place all in a large baking dish, with a water bath half way up the sides; don’t splash water into the individual dishes, it will muck up the consistancy.

Bake
350• for about 45 minutes

Once cooked, sprinkle sugar on the top of each pot, then broil for a few minutes until more than just golden brown, but not burned.

Remember in the movie “Amélie“?  When she cracks the top of her Crème Brûlée?
It’s the measure of this tasty dessert!

enjoy!

Cupid Cakes

cupid-cakes

Messermeister, a local knife Company is conducting a fun Cupcake Contest!
Consider entering your favorite cupcake!  I entered “Call Me Cupid” cakes-

Cupid Cakes…
Ingredients:
1/2 c. butter
1 1/2 c. sugar
3 eggs
2 t. vanilla extract
2 c. ‘Swans Down’ cake flour
1 t. baking powder
1 t. baking soda
pinch of salt
3/4 c. cocoa powder
1 c. water
1 c. sauerkraut (surprise!)

Preheat oven to 350º

Drain off the sauerkraut juice, then rinse it well with water five times or so.
Let drain, then press extra liquid out of your fine strainer.

Cut the sauerkraut with kitchen shears.
(I suggest you cut it somewhat fine so your cupcake eaters don’t balk at the thought of it‐
If they don’t know, they will love these delicious, moist cupcakes!)

In a mixing bowl:
with an electric mixer; cream the butter with sugar, until it is mixed through
& looks a bit gravel‐like.

Beat in eggs, one at a time. Add vanilla extract & mix well.

In a separate bowl;

Sift together flour, baking powder, baking soda, salt & cocoa powder.
Add large spoonfuls of the dry ingredients to the wet ingredients, each time
also add water.  Continue the steps until all ingredients (except sauerkraut) are mixed together.
Be sure to scrape down the sides of your bowl after each addition.

Stir in:
Sauerkraut, then mix by hand- gently but thoroughly.

Line the cupcake pan with cups, & fill each up with about 1/2 c. batter,
or about 3/4 way up the ‘cup’.

Bake @ 350º for about 18‐20 minutes.

(Rather than use a timer, I like to gauge the process by the amazing smells wafting
through my home. If you’re easily distracted, use a timer‐ & YES I’ve ruined a few things…)

Test with a toothpick; stick it in the middle‐ if it comes out clean, they’re ready!

Frosting
Melt;

In a double‐boiler, or over very low heat;
one 6‐ounce package of semisweet Baker’s Chocolate Squares
4 T. butter
Once melted, remove from heat.  Set aside to cool for a few minutes.

Mix into cooled chocolate mixture;
1/2 c. sour cream
1 t. vanilla extract
pinch of salt

Transfer:
To a mixing bowl, then using an electric mixer, gradually add:
2 1/2 c. – 2 3/4 c. powdered sugar & beat well.

Don’t try to frost warm cupcakes.  Let them fully cool.
Swirl on the rich chocolate frosting.

Decorative Frosting Topper
Ingredients:
3 T. sour cream
3 T. ‘whipped’ cream cheese
1 T. red beet, peeled (grate very fine with a ‘zester’)
6 or 7 T. powdered sugar
1/2 t. vanilla extract

Red dusting sugar (sprinkle over at the end)

Mix together:

The finely grated beets, with the sour cream & cream cheese.
Scrape sides & mix well, then add vanilla extract.
Let it stand for a few minutes to take in the glorious color of the beet-

Mix:
With an electric mixer: the powdered sugar; one tablespoon at a time.
Sweeten to taste.  (remember the chocolate frosting is sweet & this is just intended for an accent design
atop the cupcake)

I like to make a ‘heart’ design on each cupcake, then I dust each one with
red ‘dusting’ sugar.

GO FOR IT! Surprise your Valentine!

enjoy!

*nutritional information; sauerkraut & beets have Vitamin A, Vitamin C, Calcium, Iron & Fiber*

Get in my Belly! Everything but the Kitchen Sink Cookies!

Get in my BELLY!

This is a tasty, filling, flour-less cookie.

2/3 c. butter, melted
2 c. brown sugar
3 fresh, free range eggs
1 1/2 c. peanut butter
2 T. baking soda
6 c. oats (old fashioned, not instant)

In a small saucepan, melt butter, then set aside to cool.

In a large bowl or mixer put:

butter, sugar & eggs, whisk
add peanut butter & mix well

Use an ice cream scoop, or a tablespoon to transfer dough to  parchment covered cookie sheets

Banana-Graham Bread

Tonight I had the pleasure of visiting Randy & Robin Graham.  They served me up a Guinness & we shared a few stories of days gone by, then Randy shared his new cookbook with me, which looks fantastic!

I brought them by some of my fresh Banana Bread, which I’ll call Banana-Graham Bread, because they recently shucked pecans from their tree, then candied them.  I put the pecans in the bread, hence the name-
This Banana Bread is my best-ever- the candied pecans make it so tasty!

Banana-Graham Bread
preheat oven to 350

In a medium bowl thoroughly mix:
4 VERY ripe bananas (so ripe that your Dad says ‘shouldn’t you toss those‘?)

Mash the bananas with a fork, then add:
3 eggs (mix with a fork before adding)
1 c. buttermilk
1 T. vanilla extract
Melt 2 cubes of salted butter & let cool before adding to the above mixture.

In another medium-size bowl thoroughly mix:
2 c. rolled oats
1 c. ‘Swans Down’ Cake Flour
1 1/2 t. baking soda
1/2 t. baking powder
1 c. brown sugar
1 c. candied pecans (broken up a little bit)
1 1/2 T. ground cinnamon

Mix the wet ingredients with the dry, then set aside.
Spray ‘Pam’ into baking dishes & fill with mixture.

Bake for about 35 minutes- although it totally depends on what size loaves you make- I tend to make varied sized, so I can freeze some, as well as have little loaves to give to friends.
Your toothpick should come out clean- don’t overcook this bread, as it’s a lovely bread when moist.
I tend to pay close attention to the amazing smells wafting throughout my home, so I don’t over cook it.

enjoy!

note: I’m a bit of a  ‘press and seal‘ addict… just ask my daughter.  I love making lots of tasty treats so I can seal
and freeze them, for when I’m too busy to cook, or just not in the mood to cook, or I just want to press and seal…
I’ve included a photo of my all-time favorite bread making pan from France- it makes multiple loaves so easy to handle.

Chocolate Covered Strawberries filled with Jalapeño Jelly

Just when I thought I’d tried just about EVERYTHING with Ojai Jalapeño Jelly on it or in it…
Then I melted some dark chocolate that my son got for me @ Trader Joes- OMG!!!  Crazy delicious.
You can buy the injecting ‘tool’ @ Sur la Table or Williams Sanoma.

2 Trader Joes Dark Chocolate Bars, melted (73% super dark)
10 large, fresh, organic strawberries (washed, dried off a little so the chocolate will stick)

Melt the chocolate over a double boiler, unless your flame is very low and steady.

Let the chocolate cool for a few minutes, then, using the stem as a handle, dip the strawberries in the chocolate.
Twirl until strawberries are covered evenly.

Fill an injector tool with Ojai Jalapeño Jelly, put Jelly in the berries, then place in the freezer for 5 minutes to harden the chocolate.

enjoy!

Coconut Cake…

Coconut Cake…

This light & lovely old-fashioned kind of cake will surprise you & your guests-
keep an eye on it because guests tend to ditch the utensils & use their fingers on this tasty treat!

Preheat oven to 350˙

Butter & lightly flour two-9” round cake pans.

CAKE:

1 c. milk
¾ c. shredded, sweetened coconut
¾ c. (1 ½ sticks) butter
1 c. sugar
1 t. pure vanilla extract
3 c. swans down cake flour
4 t.  baking powder
dash of salt
4 egg whites

FROSTING:

5 egg whites
1 ¾ c. sugar
5 T. ice water
¾ t. cream of tartar
1 t. pure vanilla extract
¾ c. coconut (lightly brown coconut in a 300˙ oven or carefully under oven broiler)
1 ½ c. lightly toasted shredded, sweetened coconut

Heat the milk to almost a simmer and add the coconut.  Steep for about 10 minutes to infuse the coconut flavor to the milk.
Strain & allow to cool, reserving both the milk & the coconut, separately.

With an electric mixer, cream butter, & sugar till smooth. Then, add the vanilla.

In a separate bowl, have your flour, baking soda & pinch of salt mixed thoroughly.

Alternately add cooled milk, & flour mixture to the butter mixture, scraping down the sides occasionally.  Once it’s evenly mixed, add the drained coconut.

Beat the egg whites until they stand in peaks, but NOT dry.  Fold whites gently into cake batter mixture.  Divide the batter between the 2 cake pans.
Bake for 25-35 minutes, or until a toothpick comes out clean.    Don’t over cook.  Cool for 10 minutes in the pans, then turnout onto racks, and cool thoroughly before frosting.

7 minute icing:

Place egg whites, sugar, water, & cream of tartar in the top of a double boiler over rapidly boiling water.  Beat with an electric mixer for 7 minutes.  Remove from heat, add vanilla, & continue mixing until light, fluffy & glossy.

Spread icing between layers & over cake with a long, icing spatula.  After letting the icing set up for about 15 minutes, hand distribute the lightly toasted coconut over the top & sides of your beautiful cake.

Celtic Tart

Prep time: about 15 minutes
Cooking time: 50-60 minutes
Oven temperature: 325º

2 1/4 cups Swans Down Cake Flour (because I don’t like to sift)
1/2 cup sugar
3 eggs- separated
3 Tablespoons Dark Rum
2/3 cup butter, salted @ room temperature -cut into small bits

I like to use my big roast turkey cutting board because it’s concave & easy to clean-
Place the flour in the center of the board & form a well. Crack one egg & place the yolk in the center of the well-
be
sure to reserve the whites for later. Introduce the sugar & the rum to the well, then add the other 2 egg yolks.
Using your fingertips (or a fork), work the outer edges of the flour toward the center of the well. Integrate the ingredients until they become somewhat consistent & resemble cornmeal. Knead in the bits of butter & the dough will get much easier to manage- Roll into a ball & place in a lightly buttered baking tin, 8″ in diameter. Flatten out the dough with the palm of your hand to meet the edges of the tin.  I bake this treat in a decorative earthenware dish that embosses it with hearts. With a fork make some squiggles on the tart in each direction, then paint on a small amount of the reserved egg white & bake.

Great on a cold, rainy day with a hot cuppa-

enjoy!
