Burnt Sage Butter

Instructions;

Place about 1/2 c. butter (salted) into a medium frying pan, over medium heat.
Cook until butter is fully melted & almost golden brown in color-
Into the browning butter, add 10-15 culinary sage leaves (organic, whole sage leaves).
Swirling the mixture often, cook butter and sage leaves for about 4-5 minutes more, until the butter turns an almost deep nut brown color, sage leaves will be quite crisp and irresistible-

Inspired by Dario, Chef Extraordinaire
Ca’Dario Restaurant

It was by the hand of Dario that I was first graced with
“burnt sage butter”- now I’m hooked!

Ca’Dario’s is my favorite Italian Restaurant, if not my favorite restaurant overall-
Dario is as sweet as he can be & he’s a hell of a chef-

When you dine at Ca’Dario, be sure to order; RAVIOLI AL BURRO E SALVIA It’s heaven!

Healthy Buttermilk Waffles

Makes about 10 delicious, light waffles-
(cook up what’s left over, it freezes well.  Just pop them in the toaster & serve)

1 c. whole wheat pastry flour
1 c. self rising flour
3 T. brown sugar
1 t. baking soda
1/2 t. cinnamon
2 c. buttermilk
3 eggs, separated
1/3 c. butter (melted & cooled)

1. Prepare your waffle iron & spray lightly with oil-
2. In a large mixing bowl, mix together the flours, sugar, baking soda, & cinnamon.
3. In another bowl stir together the buttermilk, egg yolks, & butter.
4. In yet another bowl beat the egg whites until just shy of stiff.
5. Stir the buttermilk mixture into the dry ingredients, until almost fully blended.
6. Gently fold in the egg whites.
7. Using a ladle or tea cup, put about 1/2 c. batter for each waffle into the prepared waffle iron.
8. Cook until crisp & golden, about 2 minutes.
9. Serve immediately with E. Waldo Ward & Son syrup (our family favorite is Apricot).

enjoy!

Local Ojai Business; Messermeister Knives

Messermeister is a locally owned business, they make great quality knives (& much more I’m discovering), in part because they recently posted a ‘cookie making contest’ that I couldn’t pass up…  My video = poor My music = good quality of recipe = EXCELLENT!  I entered “Get in my Belly- Everything but the Kitchen Sink Cookies”, those of you that know me well know these as Colby’s Cowboy Cookies- They’re like a protein bar or gorp- remember gorp?
I first discovered Messermeister’s at a local school fundraiser.  I placed a ‘silent bid’ on a set of three beauties & won-  They are beautifully crafted, I use them every day & I love them!

Good luck to all that entered the Cookie Contest-
FYI; my favorite entry BY FAR was submitted by Kristin Eldridge & her adorable son (& fantastic helper), Benny!!!  Check it out here.

Village Cheese & Wine, Montecito

My family and I have enjoyed going to Village Cheese & Wine for many years-  We LOVE Haoni (John), the sweet ‘Kiwi’ born owner, and sandwich maker aficionado!  He always has an interesting tale, or a funny story to tell, & GOD knows he makes the most amazing sandwiches!  My favorite is the ‘half on a whole, turkey n’ cheese’.  Now Village Cheese & Wine sells Ojai Jalapeño Jelly & Ojai Halapeno Jelly!!! It rocks any sandwich!  That’s right!
