Pickled Asparagus

Makes 5-6 quarts

Surprisingly crunchy & delicious like a great pickle can be-
Eat alone, cut them into your chopped salad, serve with cheese,
or use as a ‘swizzle stick’ in your next Bloody Mary!

Wash 6 quart-size jars
Sterilize jars & lids

Wash all ingredients-
You’ll need;
Asparagus- about 5-6 clusters
Break or cut off asparagus ends, allowing asparagus to stand in jar; about 3/4″ from top.
18 sprigs of fresh dill – 3 per jar
12 cloves fresh garlic – 2 per jar
6 small Peppers – 1 per jar (Habanero, Serrano, or Jalapeรฑo; dried or fresh)

Fill clean, sterilizedย  jars with raw ingredients; asparagus, dill, garlic & Peppers.

In medium sized pot, boil until salt is dissolved:
6 c. water
2 c. apple cider vinegar
6 T. kosher salt

Using a ladle, fill jars with hot liquid-
Always remember to leave about 1/2″ at the top, as per canning instructions.

Seal jars.
When cooled, store jars in refrigerator for at least 2 weeks.
(you can also make with fresh green beans instead of asparagus)

enjoy!

Conquering Hummus

I โ™ฅย  hummus!ย  It tastes amazing & it’s so full of protein!
Today I decided to try making it myself-
I looked in my cookbooks & every recipe for hummus I found suggests using CANNED garbonzo beans-

So, knowing I had to work on my computer most of the day, I soaked the chickpeas (about 5 cups)
for about 3 hours.
I rinsed them, then covered again with water, plus about 2 extra inches.
I had extra green onions, so I added about ten & I picked a large handful of rosemary & added it to the mix
+ a generous amount of sea salt.

My Dutch Oven (on the stove top) cooked the mix for a few hours on a low/medium heat.
The house smelled great-

Once tender I rinsed them lightly & I removed the large leftovers of green onions & rosemary.
Some bits remained & made the final hummus very tasty-

I need to remember to purchase a large Cuisinart…
In the meantime, I added to my mini Cuisinart;

Jalapeรฑo Hummus
2 c. Cooked Chickpeas strewn with bits of rosemary, etc.
Juice of one Lemon
2 T. Sesame Tahini
3 T. Jalapeรฑo Olive Oil (if you don’t like heat, use Basil Olive Oil or plain Olive Oil)
2 Garlic cloves, minced (I prefer to use Darot– defrost before adding)
1/2 t. ground coriander
1/2 t. ground cumin
pinch of ground turmeric
fresh ground salt + pepper to taste

Pulse in Cuisinart until smooth & mixed.
I served this with spears of toasted Curried Indian Naan & it was amazing!
It would be delicious served with a fresh medley of carrots, jicama, & bell pepper-

So, I asked my daughter to sample the hummus- she said “Mom, you know I don’t like hummus”
But, being the good sport that she is (or did she just have mini pangs of guilt thinking back on all the times she’d locked me out of the house, while I gardened, so she could cook everything she could reach?)ย  She expected me to try “it” every time, & I did- She did too & she loved it!

I made it this way too;

Sweet Pepper Hummus
2 c. cooked chickpeas with the bits
Juice of one Lemon
1 roasted sweet bell pepper
(rubbed with olive oil- roast in oven on cookie sheet- put in plastic bag to cool, then removed peel & dice)
3 T. basil olive oil
2 T. sesame tahini
2 cloves garlic (Darot)
1/2 t. ground coriander
1/2 t. smoked paprika
fresh ground salt + pepper to taste
Delicious served with a fresh medley of carrots, jicama, & bell pepper

enjoy!

Spicy Mediterranean Apricot Boats

Here’s what you’ll need;

2 heads of Organic Endive-
1 handful โ€œMediterranean Apricotsโ€, cut in thin, long strips
1/2 c. โ€œAbsolut Vodkaโ€
3 T. Ojai Habanero Jelly
4 sprigs of Organic Lemon Thyme
1 t. Green “Caper” Brine
1 Chรจvre Log (I like “Cypress Grove” Chรจvre Logs with herbs), room temperature
about 25 Green Capers
about 10 Walnuts (or Pecans), dry roasted, broken up

Carefully pull apart the endive leaves; wash, spin, & set aside to dry

In a small saucepan, over low heat, simmer;
Apricots strips, covered with Vodka, Ojai Habanero Jelly, lemon thyme & brine.
Stir occasionally to mix.
It will take about 10 minutes to cook off the liquid.
Once it thickens, set aside to cool.

With a frosting piping bag (or a strong plastic bag), pipe the chรฉvre onto the center section of the endive.

For each endive ‘boat’, add:
1 strip of the Spicy Mediterranean Apricot
1 caper
1 small piece of walnut (or pecan) dry roasted

Place on a platter & watch them disappear-
(no serving utensils needed)
The apricots are the same beautiful color as the Ojai Habanero Jelly, so it seems like you’re eating a long strip of hot Habanero Pepper, but the union of flavors united are divine- not too hot, not too sweet!

enjoy!

Humboldt Fog & Endive

Yesterday was my dear friends birthday; Kathleen Nolan of Ojai, CA.

Every chance I get I like to experiment with new recipes on my friends- so I wandered through Whole Foods & bought some amazingly creamy & delicious, aged Cypress Grove “Humboldt Fog” Goat Cheese,
& 2 heads of Organic Endive- as a starting point for my dish-

Once home, I carefully pulled apart the endive, one layer at a time,
gently cutting as little as possible off the base to free up more leaves; (wash, spin & sit aside)
I placed a handful of “Mariani Cranberries” (sweetened, dried), in a small saucepan with:
1/2 c. “Absolut Vodka“
2-3 T. Ojai Habanero Jelly
dash of caper brine
4 sprigs of organic lemon thyme

I slowly simmered this mixture, I occasionally gave it a little jostle to mix.  Once the liquid is mostly cooked off (about 10 minutes), set aside & cool.

Use a butter knife to transfer about 1/2 t. of the “Humboldt Fog” Goat Cheese onto the base end of the
endive (at this point, the cheese was almost room temperature & a bit gooey).
I placed the filled endive on a large, black serving plate & added:
1 cooled Vodka-Habanero-Cranberry
1 caper
& 1 tiny piece of a candied pecan
I had some left over “Humboldt Fog” Goat Cheese & cranberries, so I put them in a little bowl in the middle of the platter with a small serving spoon, for guests to apply more Heat & Sweet IF they so desired (& they did!).

ยกVegan Sushi with a Savory Ojai Pepper Jelly/Peanut Dipping Sauce!

Last night our “Valley of the Moon” aka ‘Ojai Valley Community Garden’ group met for our first ‘potluck’ dinner.ย  It was well attended, full of delightful conversation(s), and we had lot’s of tasty foods to try.ย  We met in the Keith’s Club House- Thank you Keith & Robin -again!

Here’s what I brought, I’m going to call it: Vegan Sushi Rolls-

Ingredients;

about 10 Spring Roll Skins (run warm water over them and use right away)
Finely chop &/or grate vegies of your choice-
I chose:
Red Bell Pepper
Asparagus
Fennel Root
Carrots
Avocado (leave the avocado about 1/2″ size cubed)
Wild or brown rice (wild is visually more appealing)
Black sesame seeds (great fleck of color, tastes amazing & they’re so good for you!)
Splash of rice wine vinegar
Squeeze of fresh lemon (I occasionally add a bit of zest too)

Do not chop, but wash, carefully spin or let air dry
Cilantro (separate by the leaves)
Nasturtium flowers (separate by the flower or the petals- this adds a little spice and lovely color)

FYI: I suggest that you practice a time or two with the slightly temperamental wraps-ย  ONLY get them wet, ONE AT A TIME- plan on scraping one as you practice.ย  Don’t lay them together when they’re wet-ย  I’m convinced this is how the ‘super ball’ was invented…

I recommend that you uniformly cut/chop/grate your vegetables- (carrots: grated, fennel root: chopped fine, etc)
Place all vegies in a bowl, large enough to toss as you would a salad.
Add all but the cilantro and the nasturtium & toss.

Next, run the rice paper under warm tap water until it changes from hard to mailable.ย  Lay it on a very thin kitchen cloth (no fuzz), and lightly dab off the excess water.ย  I then very lightly spray olive oil “Pam” on a olive serving tray to assist in forming the rolls-ย  Lay the rice paper across the olive oil tray & push in the center, forming the cavity to fill with the vegetable mixture.

The first item(s) I place on the rice paper are the nasturtium flower petals, & the cilantro leaf (this is the splash of color you’ll see best when the rolls are completed).
Next add about 3 T. of the vegetable/rice mixture to the rice paper.
Pull up ends of the rice paper, then one side at a time- all the while attempting to create a uniform sushi-looking roll.

Lightly sprinkle black sesame seeds on top of each roll if you’d like a bit more flavor, texture and an Asian flair-
These wraps are translucent & make very pretty finger-food.
Practice a bit and see if you can get them rolled long & lean, like a sushi roll; about 2″ wide by about 7″ long.

Savory Dipping Sauce

Peanut Butter (freshly ground tastes best)
Ojai Jalapeรฑo Jelly or Ojai Habanero Jelly

Mix the peanut butter with the Ojai Pepper Jelly until you like the consistency, as well as the heat factor.
It’s best to serve the sauce with a small serving spoon, so it can be dribbled on the roll.ย  Often people like to add sauce as they go & we don’t want them double dipping now do we!

Serve on a plain platter, so you can enjoy the natural colors of the ingredients.

enjoy!

Celtic Tart

Prep time: about 15 minutes
Cooking time: 50-60 minutes
Oven temperature: 325ยบ

2 1/4 cups Swans Down Cake Flour (because I don’t like to sift)
1/2 cup sugar
3 eggs- separated
3 Tablespoons Dark Rum
2/3 cup butter, salted @ room temperature -cut into small bits

I like to use my big roast turkey cutting board because it’s concave & easy to clean-
Place the flour in the center of the board & form a well. Crack one egg & place the yolk in the center of the well-
be
sure to reserve the whites for later. Introduce the sugar & the rum to the well, then add the other 2 egg yolks.
Using your fingertips (or a fork), work the outer edges of the flour toward the center of the well. Integrate the ingredients until they become somewhat consistent & resemble cornmeal. Knead in the bits of butter & the dough will get much easier to manage- Roll into a ball & place in a lightly buttered baking tin, 8″ in diameter. Flatten out the dough with the palm of your hand to meet the edges of the tin.ย  I bake this treat in a decorative earthenware dish that embosses it with hearts. With a fork make some squiggles on the tart in each direction, then paint on a small amount of the reserved egg white & bake.

Great on a cold, rainy day with a hot cuppa-

Irish Recipes

Trio of Peas – Lifescript

Peas have been eaten in Ireland and England for centuries. Traditionally dried then re-hydrated before cooking, it became fashionable to eat fresh (or green) peas in the 1600s. Tart lemon and tarragon liven up this three-pea saute. This delicious side dish also packs a high-fiber punch.

Serves: 4 (3/4 cup each)

Preparation time: 20 minutes
Cook time: 20 minutes Ingredients:

2 teaspoons canola oil
1 cup organic snow peas, trimmed
1 cup sugar snap peas, fresh or frozen
2 cups (8 ounces) frozen peas
1/2 teaspoon freshly grated lemon zest
4 teaspoons lemon juice
1-1/2 teaspoons dried tarragon
1 teaspoon butter
Salt to taste

Preparation:

1. Heat oil in a large nonstick skillet over medium heat. Add snow peas and sugar snap peas and cook, stirring occasionally, for 2 minutes.

2. Stir in frozen peas; cook, stirring occasionally, until heated through, about 3 minutes.3. Remove from heat and stir in lemon zest, lemon juice, tarragon, and butter; season with salt.

enjoy!

Red Potato Colcannon – Lifescript

There are countless variations on this classic Irish potato-and-cabbage combination. Ours is made with steamed red potatoes, sauteed cabbage and just a touch of butter. Serves: 4 (1 cup each)

Preparation time: 30 minutes
Cook time: 30 minutes

Ingredients:

1 pound organic small red potatoes, scrubbed and cut in half
1 tablespoon butter
1/2 cup thinly sliced onion
6 cups thinly sliced green cabbage (about 1/2 head)
1 cup low-fat milk
1 teaspoon salt
1/4 teaspoon white pepper

Preparation:

1. Bring 1 inch of water to a boil in a Dutch oven or steamer. Place potatoes in a steamer basket and steam, covered, until just cooked through, about 15 minutes. Transfer to a large bowl and cover to keep warm.

2. Meanwhile, heat butter in a large nonstick skillet over medium heat. Add onion and cook until translucent, about 2 minutes. Add cabbage and continue cooking, stirring occasionally, until the cabbage begins to brown, about 5 minutes.

3. Reduce heat to low. Stir in milk, salt and white pepper; cover and cook until the cabbage is tender, about 8 minutes. Add the cabbage mixture to the potatoes. Mash with a potato masher or a large fork to desired consistency.

enjoy!

Cranberry Sauce with a Zing

1 bag fresh Organic Cranberries, washed & drained
Fresh Organic Orange Juice or Ojai Pixie Tangerine Juice- enough to cover the cranberries in a pot
1 c. Sugar
1 Cinnamon Stick
4 whole cloves
Ojai Jalapeรฑo Jelly

Put the cranberries in the pot, cover with juice, add sugar, cloves & cinnamon stick. Over medium heat, bring to a slow boil- listen for the cranberries to ‘pop’- lower the heat a little, then once you’ve heard lots of cranberries ‘pop’, remove from heat, let cool. Set aside the cooked cloves.

You can add a few tablespoons of Ojai Jalapeรฑo Jelly for some zing~ it tastes wonderful as a garnish with Roasted Turkey.

This cranberry sauce is festive served in a small, hollowed-out pumpkin & garnished with the cinnamon stick.

DON’T forget to save the ‘left over’ liquid for future holiday martinis- it has such a great flavor! I toss the leftover cloves in the mix for added flavor.

enjoy!

Savory Egg Salad Sandwich

Do this first step ahead of time:

Mediterranean Apricot Jalapeรฑo Relish

Some people think that ALL PEPPERS are too spicy.  Many Peppers are too hot, but not these.  Try this & see if you like it…

I love APRICOTS-especially Mediterranean Dried Apricots.ย  They’re not all dry & hard like most dried apricots~ they’re moist & supple.

The other night I was craving something sweet.ย  I was rummaging through the pantry only to discover we’d eaten all of the dark chocolate.ย  That’s when I found the delicious treats.ย  I diced a handful of Mediterranean Apricots and added them to about 4 ounces of Ojai Organic Jalapeรฑo Jelly & it was fantastic! Try this with turkey, chicken, pork, PB&J’s, or with cream cheese on crackers.

1/2 c. Mediterranean Apricots, diced
4-6 ounces Ojai Organic Jalapeรฑo Jelly

enjoy!
