Asparagus Spears wrapped in Prosciutto, drizzled with Habanero-Balsamic Reduction

This is a delicious appetizer- & the first way I tried prosciutto-

One bunch of organic asparagus spears- ends cut off, washed
About 10 thinly shaved pieces of prosciutto-
Cut each strip into 3 long strips, about 1″ wide

Boil a pot of water then turn off the heat.
Add asparagus & let sit for 2-3 minutes.
Drain & immediately cover with ice to preserve color.
Drain & gently pat dry. Set aside.

In a saucepan over low to medium heat add;
3 T. Ojai Habanero Jelly
1/2 c. Balsamic Vinegar
handful of craisins

Whisk together & stir until thickened, then remove from heat.

Wrap towel-dried asparagus with strips of prosciutto by twisting the asparagus as you hold the prosciutto.
For easy clean up, lay wrapped asparagus side by side on foil, in a baking dish.
Drizzle with balsamic Habanero reduction.

Broil for 5-7 minutes-

Served warm or @ room temperature-

Savory, sweet, salty wonderfulness- & you get your vegetable too!

enjoy!

Burnt Sage Butter

Instructions;

Place about 1/2 c. butter (salted) into a medium frying pan, over medium heat.
Cook until butter is fully melted & almost golden brown in color-
Into the browning butter, add 10-15 culinary sage leaves (organic, whole sage leaves).
Swirling the mixture often, cook butter and sage leaves for about 4-5 minutes more, until the butter turns an almost deep nut brown color, sage leaves will be quite crisp and irresistible-

I’m in L-O-V-E with my new BBQ; Day #1

Main:
BBQ’d Chicken
1 package of hormone free, organic free range chicken pieces; with skin & bones, as you see above-

Savory Marinate-
In a big bowl mix together;
“Earls Gone Wilds” BBQ Rub
“Lea & Perrins” Worcestershire Sauce
“A1” Steak Sauce (I have always โ™ฅ’d A1, just don’t โ™ฅ steak…)
Cayenne Pepper
1 T. “Tapatio” hot sauce + a splash of “Tabasco” Sauce
“Susie Q’s” Seasoning (Red label does not contain MSG)
il Fustino’sย  Jalapeรฑo Olive Oil
Coarsely ground Black Pepper
Just a splash of beer (or wine)
Mix, toss, turn & let sit for an hour or so-
when you’re about ready to grill, toss the chicken pieces around as you toss a salad.ย  Then let marinate drip off a bit before placing the chicken on the grill-ย  You can pretty quickly get some pretty grill “marks” going on, but to keep the chicken real tasty & tender I HIGHLY recommend you switch the chicken over to water-soaked wood cooking planks for about 15 minutes- A moment before removing from heat, pour about 1 T. Ojai Habanero Jelly over each piece for a little extra “kick“.

Vegetables:
Organic Fresh Corn circles

Organic mini- “Yukon Gold” Potatoes

Fresh Corn on the Cob, cut into little discs-
While slowly BBQ-ing the corn, paint it occasionally with “Burnt Sage Butter”

In a microwaveable bowl place;
about 1/2 c. water
7-9 Yukon Gold Potatoes

Sprinkle with salt, pour olive oil over them & fresh coarsely ground black pepper-
Par-bake the potatoes in the microwave, then finish them up on the BBQ, occasionally turning.

& last but not least…

Dessert;
Berry Cobbler…

I BBQ’D dessert in a black “Brazilian” baking dish;
I added about;
2 c. frozen raspberries (because that’s what I had- most any berry will do-)
I threw in about 2 T. cornstarch
Over the berries, I poured about 1/2 c. of “E. Waldo Ward & Son” Apricot Syrup
& a squeeze of fresh “Meyers” Lemon juice.

I added this as the topping;
2 handfuls of “Bisquick”
1 handful of “Swans Down” cake flour
I added about a 1/3 c Organic “Horizon” Milk (2%)
about 1/3 c. melted butter
dash of vanilla extract
pinch of cinnamon

I put it all on the BBQ with the lid closed & it thickened up & cooked beautifully-
It was delicious!

I hope you’ll try some of my BBQ recipes-
It’s enjoyable to be outside cooking + it’s been too hot to cook inside…

enjoy!

Ojai Jelly BBQ Sauce

Tip (especially for you men out there that think youโ€™re THE BBQ KING!)
I suggest that you try LOW & SLOW
Great things canโ€™t be rushed! Take your time with low heat, & baste often.
It will come out more tender & delicious than ever!ย  Youโ€™ll love the input around the dinner table too!
Some meats (ribs) are great tenderized in pineapple juice overnight then BBQ’d with this sauce-

Ingredients;

5 T. olive oil
1 small brown onion- chopped
7 large cloves of garlic, minced
2 cans (28 ounces each) โ€œOrganic Fire Roastedโ€ crushed tomatoes
1 T. cayenne pepper
5 T. Worcestershire sauce
5 T. apple cider vinegar
1/2 c. unsulphured molasses
1/4-1/2 c. Ojai Jalapeรฑo Jelly or Ojai Habanero Jelly
Coarse salt and freshly ground black pepper

Directions;

In a medium saucepan over medium heat, heat olive oil.
Add onion and garlic.
Cook, stirring, until onion is soft and translucent, about 5 minutes.

Stir in all other ingredients & simmer until reduced by a third-
Stir occasionally. This will take about minutes.ย  Add salt & pepper to taste.

Working in batches, puree sauce in a blender.
Pour into jars & refrigerate for up to 2 weeks.
Great gift for Dad on Fathers Day!

enjoy!

Celebration Dinner~

Today was my daughters first day of high school!ย  To celebrate I made a special dinner;

Baked chicken breast made with spicy ‘E. Waldo Ward’ olives, olive brine, olive oil, & bread crumbs.ย  At the very end I added Asiago cheese on top.

Fresh Angel Hair pasta with burnt butter sage drizzled over it, & freshly grated Parmesan cheese on top.

Baked multicolored mini potatoes with olive oil & jalapeรฑo sea salt.

Crisp romaine lettuce with black sesame seeds, rice wine vinegar, olive oil, & a smidgen of grated Asiago cheese

Cowboy Relish & Lemon Zest BBQ’d Chicken

1 c. Cowboy Relish (recipe above)
Lemon Zest of 1 large lemon
3/4 c. Rice Wine Vinegar
5 T. Ojai Jalapeรฑo Jelly (or Ojai Habanero Jelly)
2 full Chicken Breasts (4 single breasts)

Place all ingredients in a bowl or plastic bag & let marinate overnight, or as little as 30 minutes.
Seal the container to maintain flavors.
I threw this together very quickly last night at an impromptu BBQ-ย  It was amazing after only 20 minutes of marinating.ย  That said, if you have time, put it all together and marinate overnight in the refrigerator.

Drain off Peppers & liquid, setting aside for basting later.
BBQ chicken on a medium-high flame, sealing in the flavor & maintaining tender breasts-

I move the chicken around on the grill a bit as I BBQ, making best use of the heat while not over cooking the meal.ย  I paint the breasts with the marinate often and toward the end of the cooking process, I add the larger bits of Cowboy Relish, so they drizzle their flavor into the chicken, and also for their beautiful color.

enjoy!

Jalapeรฑo Glazed Yellow Tail

My friends Georgine and Jenn had a dinner party last night & I was asked to BBQ the fish & the Anaheim Peppers- As I do with many food items, I painted them up with Ojai Jalapeรฑo Jelly, & everything was delicious!

Here’s what I did;

2 fresh Yellow Tail steaks

Marinate fish in a covered bowl with:
5 T. Tres Classique ‘Lemon Splash’ Balsamic Vinaigrette
1 c. 5-Pepper Syrup

Let the fish marinate for a few hours.ย  Drain off liquid, then BBQ over medium flame, turning often to cook evenly- Don’t dry the fish out.

Paint fish with Ojai Jalapeรฑo Jelly- flip then paint again.
The Jelly will glaze beautifully, & seal in the flavors.

You don’t need tartar sauce with this dish.

I painted the Anaheim Peppers & BBQ’d them also- everything was tasty!

enjoy!

Steve Schalla’s Grilled Pork Tenderloin w/ Jalapeรฑo Jelly Sauce

Ingredients:

2 tablespoons olive oil

1 large sweet onion, finely chopped

1 small clove garlic, minced

1 can (10 1/2 ounces) condensed chicken broth

3/4 cup Ojai Jalapeรฑo Jelly

juice of 1/2 lemon (about 1 1/2 tablespoons)

2 1/2 teaspoons cornstarch mixed with 1 tablespoon cold water

salt and pepper, to taste

2 pork tenderloins, 1 to 1 1/2 pounds each

Pork Tenderloin is a very lean meat. It’s nearly as low in saturated fats as chicken breasts. The low fat content tends to make the meat somewhat bland and a good marinade helps to keep the meat juice in and provide additional flavor. Often, the problem with cooking Pork Tenderloin is that it’s easy to overcook and dry out the meat. Trader Joe’s sells marinated Pork Tenderloin with Black Pepper and Garlic. It grills nicely at medium heat for about 20 minutes. Use a meat thermometer to pull the tenderloin off the grill when the internal temperature reaches 160 degrees.
The Jalapeรฑo sauce pored over the sliced Tenderloin provides additional flavor and moistness to the dish.

To prepare the sauce:

Heat 2 tablespoons olive oil in a medium saucepan. Sautรฉ the onion until tender and yellow in color. Add garlic and sautรฉ for 1 minute longer. Add the chickenย  broth, Jalapeรฑo Jelly,ย  and lemon juice. Bring to a boil. Reduce heat to medium-low and simmer, uncovered, for 5 minutes. Stir the cornstarch and water mixture into the sauce and continue cooking, stirring, until sauce boils and is thickened, about 3 to 5 minutes. Add salt and pepper to taste and set aside.

enjoy!
